Cherry Coconut Rice Balls

Ingredients

  • 2 cups almond milk
  • 1/4 cup brown sugar
  • 2 Tbsp. honey
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. sea salt
  • 1/2 cup Arborio rice
  • 10 Tillen Farms Merry Maraschino Cherries, halved and stems removed
  • 1/2 cup coconut flakes

Directions

Preheat oven to 375 degrees F.

In a large saucepan, combine almond milk, brown sugar, honey, cinnamon and salt; bring to a boil over medium heat. Add in Arborio rice and stir. Reduce heat to low, and cook, stirring occasionally, until rice is tender, 30 minutes.

Transfer rice to a bowl; add Tillen Farms Cherries and coconut flakes; mix well to combine. Cover and place into the refrigerator for 2 hours.

Remove mixture from the refrigerator. Using a tablespoon, form rice mixture into balls. Place balls onto a baking sheet and refrigerate until firm, at least 1 hour.
