Merry Meringues


  • 24 Tillen Farms Merry Maraschino Cherries
  • 2 large egg whites, at room temperature
  • 1/8 teaspoon cream of tartar
  • 1/8 teaspoon kosher or fine sea salt
  • 2 teaspoons juices from maraschino cherries
  • 1/3 cup sugar


Preheat oven to 275 degrees. Line 2 cookie sheets with parchment paper.

Remove stems from cherries and pat dry with paper towels. Beat eggs on medium-high speed in mixer until foamy. Turn off mixer; add the cream of tartar, salt and cherry liquid. Turn mixer back on to high, beat for a few moments to combine then gradually add the sugar with the mixer going. Beat until stiff, glossy peaks form, about 4 minutes.

Drop 12 heaping tablespoons of egg white mixture onto each prepared pan, spacing about 2 inches apart. Nestle a maraschino cherry into the center of each mound. Bake for 2 hours. Without opening the oven door, turn off the oven and let the meringues sit for an additional 20 minutes. Best served within 24 hours of baking.
