Bada Bing Manhattan Chicken

Ingredients

  • 1 jar of Tillen Farms Bada Bing Cherries
  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1 tablespoon olive oil
  • 2 tablespoons whiskey
  • 1 tablespoon sweet vermouth
  • 2 tablespoons cold butter

Directions

Drain the Bada Bing Cherries and reserve the liquid. Remove stems from the cherries and discard. Cut the cherries into quarters.

Pat the chicken breasts dry and season with salt and pepper. Heat a skillet over medium-high heat. Add the olive oil, heat then carefully add the chicken breasts. Cook for 2 – 3 minutes or until browned. Flip, cook the other side for another 2 minutes, lower the heat to medium and cover the pan. Continue to cook for about 8 minutes or until cooked through.

While the chicken cooks combine the cherries, reserved cherry liquid, whiskey and vermouth in a small saucepan. Bring to a boil and continue to cook, stirring often until the liquid is reduced by half and the mixture thickens – 6 to 8 minutes. Stir in the cold butter, 1 tablespoons at a time, until melted.

Serve the cherry sauce on the chicken breasts.
